It is a hand-stretched beef noodles native to Lanzhou, Gansu province.

It has been known since the Tang era, but it was the Dungans, the Chinese Muslim people, who popularized it at the beginning of the 20th century. Since then, the dish has been considered halal.

The word "ramen" comes from two Chinese characters 拉面 [lāmiàn] - "lamien", which means "to pull noodles."

In the middle of the 20th century, it became widespread in Japan, Korea and Central Asia. This is how ramen, ramen and lagmans appeared.
